Low Fat Italian dressing
Unlike the commercial "diet dressings" which rely on synthetic thickeners for texture, this dressing is rich and flavorful using only the finest natural ingredients.
2 canned artichoke hearts, packed in water, rinsed and drained (about ½ cup)
2 tablespoons apple cider vinegar
1 tablespoon chopped onion
2 tablespoons frozen apple juice concentrate
1 clove garlic, cut in half
1 teaspoon honey
½ teaspoon crushed dried basil
½ teaspoon crushed dried oregano
¼ cup water
pinch white pepper (optional)
Yield: 1 Cup
Combine all ingredients in blender or food processor and puree until smooth. Chill 15 minutes before serving.
Store any remaining dressing in refrigerator in a covered container.
